Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
  2. Prepare the chicken: Place each chicken breast between two sheets of plastic wrap. Pound them to an even 1/2-inch thickness using a meat mallet or rolling pin. This helps them cook evenly.
  3. Set up a standard breading station with three shallow dishes.
  4. In the first dish, place the flour. In the second dish, whisk the eggs. In the third dish, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and pepper. Mix the dry ingredients well.
  5. Dredge each chicken breast first in the flour, shaking off any excess.
  6. Dip the floured chicken into the beaten eggs, allowing excess to drip off.
  7. Press the chicken firmly into the Parmesan-breadcrumb mixture, coating both sides completely. Press the crust on so it adheres well.
  8. Place the coated chicken breasts on the prepared baking sheet. Lightly spray the tops of the chicken with cooking spray to help the crust brown.
