Learn how to make soft, fluffy diner-style pancakes from scratch. This simple recipe uses basic pantry ingredients for a perfect breakfast or brunch.

  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 ¼ cups milk
  • 1 egg
  • 3 tablespoons butter, melted

Instructions

  1. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  2. Make a well in the center and pour in the milk, egg, and melted butter. Mix until smooth.
  3. Heat a lightly oiled griddle or frying pan over medium-high heat.
  4. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Serve immediately with your favorite toppings.

Notes

  • For berry pancakes, gently fold in 1/2 cup of fresh or frozen berries into the batter.
  • For chocolate chip pancakes, add 1/2 cup of chocolate chips to the batter.
  • Serve with maple syrup, fresh fruit, whipped cream, or butter.
  • Leftover batter can be stored in the refrigerator for up to 2 days.
