1 lb halibut fillets
1 tbsp olive oil
2 tbsp butter
2 cloves garlic, minced
1/4 cup dry white wine
2 tbsp fresh lemon juice
1 tbsp chopped fresh parsley
Salt and black pepper to taste
Instructions
Pat the halibut fillets completely dry with paper towels. Season both sides with salt and pepper.
Heat olive oil in a skillet over medium-high heat until shimmering.
Carefully place the halibut fillets in the hot skillet. Sear for 3-4 minutes per side, until golden brown and cooked through. The internal temperature should reach 145°F (63°C).
Remove the halibut from the skillet and set aside.
Reduce the heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook for 30 seconds until fragrant.
Pour in the white wine and lemon juice. Bring to a simmer and cook for 1-2 minutes, scraping up any browned bits from the bottom of the pan.
Stir in the fresh parsley. Season the sauce with salt and pepper to taste.
Return the halibut to the skillet and spoon the sauce over the fish.
Serve immediately.
Notes
For a crispy sear, ensure your skillet is hot before adding the fish and avoid overcrowding the pan.
You can substitute chicken broth for white wine if preferred.
