One Pan Jambalaya with Chicken and Sausage

A vibrant and flavorful Cajun rice skillet with chicken and sausage, perfect for easy weeknight meals.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 pound andouille sausage, sliced
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 cup uncooked long-grain white rice
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh chives

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  2. Add sausage to the skillet and cook until browned. Remove sausage from skillet and set aside with the chicken.
  3. Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes.
  4. Stir in garlic, smoked paprika, oregano, thyme, and cayenne pepper. Cook for 1 minute until fragrant.
  5. Pour in diced tomatoes and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Stir in the uncooked rice. Return the chicken and sausage to the skillet.
  7. Bring the mixture back to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the rice is tender and liquid is absorbed.
  8. Remove from heat and let stand, covered, for 5 minutes.
  9. Fluff the rice with a fork. Stir in fresh parsley and chives. Season with salt and pepper to taste.

Notes

  • Adjust cayenne pepper for your desired spice level.
  • For a less spicy version, omit the cayenne pepper.
