2 celery stalks, diced

1 cup heavy cream
2 cups cooked, shredded chicken breast
1 (16 ounce) package potato gnocchi
2 cups fresh spinach, roughly chopped
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste.
Slowly whisk in the chicken broth until the mixture is smooth and there are no lumps.
Stir in the Italian seasoning, thyme, pepper, and salt. Bring the mixture to a simmer.
Once simmering, add the potato gnocchi. Cook according to package directions, usually about 3 to 5 minutes, until the gnocchi float.
Reduce the heat to low. Stir in the heavy cream, shredded chicken, and chopped spinach. Heat through gently for 2 to 3 minutes until the spinach wilts and the soup is hot, but do not let it boil after adding the cream.
