1 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract

2 cups old-fashioned rolled oats
1 cup finely chopped pecans or walnuts (optional)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This takes about 3 minutes with an electric mixer.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate medium bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Stir in the rolled oats and chopped nuts, if using. The dough will be thick.
Drop rounded teaspoons of dough onto the prepared baking sheets, spacing them about 3 inches apart. These cookies spread significantly while baking.
