Enjoy these simple, no-bake chocolate oatmeal cookies with peanut butter. They are perfect for a quick treat on a warm day or a fun baking project with kids.

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned rolled oats

Instructions

  1. Combine sugar, butter, milk, and cocoa powder in a medium saucepan.
  2. Bring the mixture to a rolling boil over medium heat. Boil for exactly 1 minute, stirring constantly.
  3. Remove the saucepan from the heat. Stir in the peanut butter until smooth.
  4. Add the vanilla extract and rolled oats. Stir until the oats are completely coated.
  5. Working quickly, drop spoonfuls of the mixture onto wax paper-lined baking sheets.
  6. Let the cookies cool and set completely, about 30-60 minutes, before serving.

Notes

  • For firmer cookies, ensure you boil the mixture for the full minute.
  • If the mixture starts to set too quickly, you can gently reheat it for a few seconds.
  • Store leftover cookies in an airtight container at room temperature.
