Make these rich, fudgy chocolate oatmeal bars without turning on your oven. They are quick to prepare and perfect for satisfying a sweet craving.

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking rolled oats
  • 1/2 cup creamy peanut butter

Instructions

  1. Line an 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium saucepan, combine the butter, sugar, milk, and cocoa powder.
  3. Heat the mixture over medium heat, stirring constantly until the butter melts and the sugar dissolves. Bring the mixture to a full rolling boil.
  4. Boil the mixture without stirring for exactly one minute. Remove the saucepan from the heat immediately.
  5. Stir in the vanilla extract and the peanut butter until smooth.
  6. Add the rolled oats to the chocolate mixture and stir quickly until all the oats are evenly coated.
  7. Press the mixture firmly and evenly into the prepared pan.
  8. Refrigerate for at least 2 hours, or until completely set.
  9. Use the parchment paper overhang to lift the bars out of the pan. Cut into squares before serving.

Notes

  • For a healthier option, substitute half the sugar with maple syrup, reducing the milk slightly to maintain consistency.
  • If you avoid peanut butter, use sunflower seed butter or almond butter as a substitute.
  • These bars store well in an airtight container in the refrigerator for up to one week.
