Make these flavorful Mediterranean chicken tacos for a light, bright, and satisfying weeknight dinner. The grilled chicken pairs perfectly with cool tzatziki and salty feta.

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 small corn or flour tortillas
  • 1 cup crumbled feta cheese
  • 1/2 cup sliced Kalamata olives
  • 1/4 cup chopped fresh parsley
  • For Tzatziki Sauce: 1 cup plain Greek yogurt, 1/2 cup grated cucumber (squeezed dry), 1 clove garlic (minced), 1 tablespoon lemon juice, 1 tablespoon fresh dill, salt to taste

Instructions

  1. Prepare the chicken marinade by whisking together olive oil, lemon juice, oregano, smoked paprika, garlic powder, salt, and pepper in a bowl. Add the chicken and toss to coat. Marinate for at least 20 minutes, or up to 4 hours in the refrigerator.
  2. Prepare the tzatziki sauce: In a small bowl, combine the Greek yogurt, squeezed cucumber, minced garlic, lemon juice, and fresh dill. Season with salt. Stir well and chill until ready to serve.
  3. Cook the chicken: Preheat your grill or a large skillet to medium-high heat. Grill or sear the chicken for 6-8 minutes per side, until cooked through (internal temperature reaches 165°F).
  4. Remove the chicken from the heat and let it rest for 5 minutes. Dice or shred the chicken into bite-sized pieces.
  5. Warm the tortillas according to package directions; heating them on a dry skillet for 30 seconds per side works well.
  6. Assemble the Mediterranean chicken tacos: Fill each warm tortilla with the seasoned chicken. Top generously with crumbled feta cheese, sliced olives, fresh parsley, and a drizzle of the homemade tzatziki sauce.

Notes

  • For a low carb chicken taco option, serve the filling in large lettuce cups instead of tortillas.
