Cheesy Loaded Meatloaf Casserole with Vegetables

This easy meatloaf casserole combines savory ground beef, melted cheese, and fresh vegetables into one satisfying dish. It is a perfect family favorite for weeknight dinners and simple meal prep.

Ingredients

  • 1.5 lbs ground beef
  • 1 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 1/2 cup shredded carrots
  • 1/2 cup frozen peas
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup ketchup (for topping)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, milk, onion, carrots, peas, salt, pepper, and Worcestershire sauce. Mix gently with your hands until just combined. Do not overmix.
  3. Spread the meat mixture evenly into the prepared baking dish. This forms your base layer for the meatloaf casserole.
  4. Bake for 30 minutes.
  5. Remove the dish from the oven. Spread the ketchup evenly over the top of the meat mixture.
  6. Sprinkle the shredded cheddar cheese over the ketchup layer.
  7. Return the casserole to the oven and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the internal temperature of the meat reaches 160°F (71°C).
  8. Let the cheesy ground beef dinner rest for 5 minutes before cutting and serving.

Notes

  • For a make ahead meatloaf casserole, assemble the dish completely (without the cheese and ketchup) and cover tightly. Refrigerate for up to 24 hours. Add 10 minutes to the initial baking time if baking directly from the refrigerator.
  • If you want a loaded meatloaf bake with potatoes, mix 1 cup of cooked, mashed potatoes into the meat mixture in step 2.
