  • 2 lbs boneless, skinless chicken thighs
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (12 oz) package shelf-stable gnocchi
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Fresh parsley, chopped, for garnish

Instructions

  1. Place chicken thighs in the bottom of your slow cooker.
  2. Add chopped onion and minced garlic over the chicken.
  3. Pour in chicken broth and diced tomatoes.
  4. Stir in basil, oregano, red pepper flakes, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender.
  6. Remove chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  7. Stir in the gnocchi, heavy cream, and Parmesan cheese.
  8. Cover and cook on high for another 30 minutes, or until the gnocchi are tender.
  9. Stir in the fresh spinach until it wilts.
  10. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker soup, you can mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir it into the soup during the last 30 minutes of cooking.
  • This soup is a great option for meal planning, as it reheats well.
