1.5 pounds carrots, peeled and sliced into 1/2-inch thick rounds
2 tablespoons butter
1/4 cup maple syrup
1/4 teaspoon salt
1/8 teaspoon black pepper

Instructions
Place the sliced carrots in a saucepan. Cover with water and add a pinch of salt. Bring to a boil and cook for 5-7 minutes, or until the carrots are tender-crisp. Drain well.
Return the carrots to the saucepan. Add the butter, maple syrup, salt, and pepper.
Cook over medium heat, stirring occasionally, for 5-7 minutes, or until the butter is melted and the carrots are coated in a glossy glaze.
Serve immediately, garnished with fresh parsley if desired.
Notes
For a less sweet glaze, use 3 tablespoons of maple syrup.
