  • 1 dozen large eggs
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups shredded cheddar cheese
  • 12 large flour tortillas

Instructions

  1. Cook sausage in a skillet until browned. Drain excess grease.
  2. In a bowl, whisk eggs, milk, salt, and pepper.
  3. Pour egg mixture into the skillet with the sausage. Cook, stirring, until eggs are set.
  4. Stir in cheese and any optional vegetables until cheese is melted.
  5. Warm tortillas slightly to make them pliable.

  10. To reheat, remove wrapping and microwave on high for 1-2 minutes, or until heated through. For a crispier exterior, reheat in a skillet or oven.
