  • 1 cup granulated sugar, divided
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, whisk together the flour, 1/2 cup of the sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, melted butter, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter evenly into the prepared baking dish.
  6. In a small bowl, whisk together the remaining 1/2 cup of sugar, lemon juice, and lemon zest until the sugar begins to dissolve.
  7. Slowly and evenly pour the lemon sugar mixture over the batter in the baking dish. The liquid will look thin; this is correct for the magic effect.
  8. Bake for 35 to 40 minutes, or until the top is lightly golden brown and the sauce has formed underneath.
  9. Remove from the oven and let cool for at least 15 minutes before serving. The sauce will thicken as it cools slightly.
