Easy Lasagna with Cottage Cheese

A simple and delicious lasagna recipe using cottage cheese for a high-protein, creamy texture. Perfect for a comforting family dinner.

  • 1 pound lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (16 ounce) package lasagna noodles
  • 1 (24 ounce) container cottage cheese
  • 1 egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. In a large skillet, cook the ground beef with the onion and garlic until the beef is browned. Drain off any excess grease.
  3. Stir in the crushed tomatoes, tomato paste, basil, oregano, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  4. While the sauce is simmering, cook the lasagna noodles according to package directions. Drain well.
  5. In a medium bowl, combine the cottage cheese, beaten egg, and Parmesan cheese.
  6. Spread about 1 cup of the meat sauce in the bottom of a 9×13 inch baking dish.
  7. Arrange a layer of cooked lasagna noodles over the sauce.
  8. Spread half of the cottage cheese mixture over the noodles.
  9. Sprinkle about 1 cup of mozzarella cheese over the cottage cheese.
  10. Spoon about 1.5 cups of meat sauce over the mozzarella.
  11. Repeat the layers: noodles, remaining cottage cheese mixture, remaining mozzarella, and remaining meat sauce.
  12. Cover the baking dish with foil.
  13. Bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  14. Let the lasagna stand for 10 minutes before serving.

Notes

  • For a smoother cottage cheese layer, you can blend it briefly in a food processor.
  • If you don’t have cottage cheese, ricotta cheese can be used as a substitute.
  • This lasagna freezes well. Let it cool completely before freezing.
