  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 pound Italian sausage
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups beef broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 cup lasagna noodles, broken into pieces
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • 1/2 cup ricotta cheese
  • Fresh basil, for garnish
  • Grated Parmesan cheese, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and Italian sausage and cook, breaking up the meat with a spoon, until browned. Drain off excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic, oregano, basil, and red pepper flakes (if using) and cook for 1 minute more until fragrant.
  3. Pour in the beef broth, crushed tomatoes, and tomato sauce. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  4. Add the broken lasagna noodles to the pot. Cook according to package directions, stirring occasionally, until the noodles are tender.
  5. Stir in the heavy cream. Season with salt and black pepper to taste.
  6. Ladle the soup into bowls. Top each serving with a dollop of ricotta cheese and fresh basil. Serve immediately with grated Parmesan cheese.

Notes

  • For a vegetarian option, omit the meat and use vegetable broth. Add extra vegetables like spinach or mushrooms.
