1 tablespoon olive oil
1 pound kielbasa sausage, sliced
1 medium yellow onion, chopped
2 cloves garlic, minced
4 cups chicken broth
2 pounds russet potatoes, peeled and diced
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 teaspoon salt (adjust to taste)
1/2 cup heavy cream (optional, for creamy version)
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced kielbasa and cook until browned on both sides, about 5 to 7 minutes. Remove the sausage with a slotted spoon and set aside, leaving the rendered fat in the pot.
Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Pour in the chicken broth. Add the diced potatoes, dried thyme, pepper, and salt. Bring the mixture to a boil.
Reduce the heat to medium-low, cover the pot, and simmer for 15 to 20 minutes, or until the potatoes are tender when pierced with a fork.
Return the cooked kielbasa to the pot. If you want a creamy soup, stir in the heavy cream now. Heat through for 2 minutes, but do not allow the soup to boil after adding cream.
Taste the soup and adjust salt and pepper as needed.
Ladle the soup into bowls and garnish with fresh parsley before serving.
Notes
For a thicker soup, remove about 1 cup of the cooked potatoes and broth, mash them, and stir the mixture back into the pot.
You can substitute smoked sausage for kielbasa if needed.
