  • 1/4 cup powdered erythritol
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 4 large eggs
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup melted butter
  • 2 tbsp cinnamon
  • 2 tbsp erythritol

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, beat the softened cream cheese with 1/4 cup powdered erythritol, 1 tsp cinnamon, and vanilla extract until smooth.
  3. In a separate bowl, whisk together the eggs, almond flour, coconut flour, baking powder, and salt.
  4. Stir the cream cheese mixture into the egg mixture until well combined.
  5. Pour the batter onto the prepared baking sheet and spread it evenly into a thin layer.
  6. Bake for 10-12 minutes, or until lightly golden.
  7. While the base is baking, mix the melted butter with 2 tbsp cinnamon and 2 tbsp erythritol in a small bowl.
  8. Once the base is out of the oven, immediately brush the cinnamon-butter mixture evenly over the top.
  9. Carefully roll up the baked base like a jelly roll.
  10. Let it cool slightly, then slice into 1-inch thick roll ups.
