1 pound rotini pasta
1 cup cubed mozzarella cheese
1 cup sliced pepperoni or salami
1 cup halved cherry tomatoes
1/2 cup sliced black olives
1/2 cup diced green bell pepper
1/4 cup shredded Parmesan cheese
1/2 cup olive oil
1/4 cup red wine vinegar
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Cook the rotini pasta according to package directions until al dente. Drain the pasta and rinse it with cold water to cool it down quickly. Place the cooled pasta in a large bowl.
Prepare the zesty Italian dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper until combined.
Add the mozzarella cheese, pepperoni or salami, cherry tomatoes, black olives, and green bell pepper to the bowl with the pasta.
Pour the dressing over the pasta and mix gently until all ingredients are evenly coated.
Sprinkle the shredded Parmesan cheese over the top.
