Bake a moist and naturally sweet banana bread loaf with honey and vanilla. This easy quick bread recipe is perfect for breakfast or a snack.

Ingredients

  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/2 cup honey
  • 1/4 cup unsalted butter, melted
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Stir in the honey, melted butter, milk, vanilla extract, and egg until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  6. If using, fold in the nuts or chocolate chips.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For a richer flavor, use very ripe bananas with brown spots.
  • You can substitute maple syrup for honey for a different flavor profile.
  • This bread pairs well with your morning coffee.
