Make this easy baked cod recipe for a quick, flavorful weeknight dinner. The honey glaze creates a sweet and savory, slightly caramelized crust on flaky cod fillets.

Ingredients

  • 4 (6 ounce) cod fillets
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon black pepper
  • 1 lemon, sliced for garnish

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the honey, soy sauce, olive oil, Dijon mustard, minced garlic, parsley, and black pepper to create the glaze.
  3. Place the cod fillets on the prepared baking sheet.
  4. Brush half of the honey glaze evenly over the top of each cod fillet.
  5. Bake for 10 minutes.
  6. Remove the pan from the oven and brush the remaining glaze over the fish.
  7. Return the fish to the oven and bake for another 5 to 8 minutes, or until the cod is opaque and flakes easily with a fork. Total cook time depends on fillet thickness.
  8. Garnish with fresh lemon slices before serving.

Notes

  • For a brighter flavor, add 1 teaspoon of fresh lemon juice to the glaze mixture.
  • If you prefer a less sweet glaze, reduce the honey to 1.5 tablespoons and add 1/2 teaspoon of smoked paprika for depth.
  • This fish cooks fast; check for doneness early to prevent drying out.
