Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 1/4 cup Greek yogurt
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 scoop vanilla protein powder
  • 1 cup almond flour
  • 1/4 cup oat flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Stir in the unsweetened applesauce, Greek yogurt, melted coconut oil, and eggs until well combined.
  4. Add the vanilla protein powder, almond flour, oat flour, baking soda, cinnamon, nutmeg, and salt. Mix until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Slice and enjoy.
