1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups mashed ripe bananas (about 3–4 medium)
3/4 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1/2 cup crushed pineapple, drained
1/2 cup shredded sweetened coconut
1/4 cup chopped walnuts or pecans (optional)
For the Toasted Coconut Topping:
1/4 cup shredded sweetened coconut
1 tablespoon unsalted butter, melted
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
In a separate medium bowl, mash the ripe bananas. Stir in the granulated sugar, melted butter, eggs, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Gently fold in the drained crushed pineapple, shredded coconut, and nuts (if using).
Pour the batter into the prepared loaf pan and spread evenly.
In a small bowl, combine the 1/4 cup shredded coconut with the 1 tablespoon melted butter. Sprinkle this mixture evenly over the top of the batter.
Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a more intense coconut flavor, toast the shredded coconut before adding it to the batter.
This banana bread freezes well. Wrap it tightly in plastic wrap and then in foil. It can be frozen for up to 3 months. Thaw at room temperature before serving.
