Hearty Old Fashioned Hamburger Soup

This is a classic, comforting soup made with ground beef, mixed vegetables, and egg noodles. It is a simple, one-pot meal perfect for a satisfying family dinner.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium potatoes, peeled and cubed
  • 1 cup wide egg noodles
  • 1 cup frozen peas

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess fat.
  2. Add the chopped onion, carrots, and celery to the pot with the beef. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Pour in the beef broth and add the diced tomatoes (with their juice). Stir in the Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  4. Add the cubed potatoes to the pot. Cover and cook for 15 minutes, or until the potatoes are tender when pierced with a fork.
  5. Stir in the egg noodles and frozen peas. Cook uncovered for another 5 to 8 minutes, or until the noodles are done.
  6. Taste the soup and adjust seasoning if needed before serving hot.

Notes

  • For a richer flavor, you can substitute 1 tablespoon of Worcestershire sauce when you add the broth.
  • If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the simmering soup during the last 5 minutes of cooking.
  • This recipe works well in a slow cooker; cook on low for 6-8 hours after browning the beef and sautéing the initial vegetables.
