- 1 pound ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 medium zucchini, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/4 cup chicken broth
- Optional: grated Parmesan cheese for serving
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add onion and cook until softened, about 5 minutes.

- Add zucchini and cook until tender-crisp, about 5-7 minutes.
- Pour in diced tomatoes and chicken broth. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened slightly.
- Serve hot, topped with Parmesan cheese if desired.
