A quick and healthy one-pan dinner featuring lean ground turkey and fresh zucchini, perfect for busy weeknights or meal prep.

  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium zucchini, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/4 cup chicken broth
  • Optional: grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add onion and cook until softened, about 5 minutes.
  4. Stir in garlic, Italian seasoning, salt, and pepper. Cook for 1 minute more until fragrant.
  5. Add zucchini and cook until tender-crisp, about 5-7 minutes.
  6. Pour in diced tomatoes and chicken broth. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened slightly.
  7. Serve hot, topped with Parmesan cheese if desired.
