1 pound ground beef
1 tablespoon olive oil
1 medium onion, chopped
8 ounces mushrooms, sliced
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup all-purpose flour
3 cups beef broth
1/2 cup sour cream
1/4 cup chopped fresh parsley
12 ounces egg noodles
Instructions
Cook egg noodles according to package directions. Drain and set aside.
While noodles cook, heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add chopped onion and sliced mushrooms to the skillet with the beef. Cook until the vegetables are softened, about 5-7 minutes.
Stir in minced garlic, salt, and pepper. Cook for 1 minute more until fragrant.
Sprinkle flour over the beef and vegetable mixture. Stir well and cook for 1 minute.
Gradually pour in beef broth, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook until the sauce has thickened, about 5 minutes.
Reduce heat to low. Stir in sour cream until well combined and the sauce is creamy. Do not boil after adding sour cream.
Stir in fresh parsley.
Serve the stroganoff sauce over the cooked egg noodles.
Notes
For a richer flavor, use a mix of mushrooms like cremini and shiitake.
If you don’t have beef broth, you can use chicken broth or water with a bouillon cube.
