  • 1 cup shredded romaine lettuce
  • 4 ounces thinly sliced hard salami
  • 4 ounces thinly sliced pepperoni
  • 4 ounces thinly sliced ham
  • 4 ounces thinly sliced mortadella
  • 4 ounces thinly sliced provolone cheese, cut into small strips or cubes
  • 1/2 cup thinly sliced red onion
  • 1/2 cup sliced pepperoncini peppers (or banana peppers)
  • 1/4 cup sliced black olives
  • For the Dressing: 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the mayonnaise, olive oil, red wine vinegar, oregano, basil, garlic powder, onion powder, salt, and pepper until smooth. Set aside.
  2. Prepare the vegetables: Place the chopped iceberg lettuce and romaine lettuce into a large bowl.
  3. Add the meats and cheese: Add the salami, pepperoni, ham, mortadella, and provolone cheese to the bowl with the lettuce.
  4. Add the extras: Toss in the red onion, pepperoncini peppers, and black olives.
  5. Dress and toss: Pour about half of the prepared Italian grinder dressing over the salad ingredients. Toss everything together until the ingredients are evenly coated. Add more dressing as needed to reach your preferred level of creaminess.
