Easy Grilled Zucchini with Parmesan and Fresh Herbs

You will make tender, charred grilled zucchini topped with savory Parmesan cheese and fresh herbs. This is a quick, healthy grilled vegetable side dish perfect for your next BBQ.

Ingredients

  • 4 medium zucchini
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the grill for medium-high heat. Clean and lightly oil the grates.
  2. Wash the zucchini and trim off the ends. Slice each zucchini lengthwise into 1/4-inch thick planks.
  3. In a small bowl, whisk together the olive oil, minced garlic, dried thyme, salt, and pepper.
  4. Brush both sides of the zucchini planks with the seasoned olive oil mixture.
  5. Place the zucchini planks directly on the hot grill grates. Grill for 3 to 4 minutes per side until tender and you see nice char marks.
  6. Remove the grilled zucchini from the grill and arrange it on a serving platter.
  7. Immediately sprinkle the grated Parmesan cheese over the warm zucchini so it melts slightly.
  8. In a small bowl, mix the chopped fresh basil and parsley. Sprinkle the herbs over the cheese.
  9. Drizzle the fresh lemon juice over the entire dish before serving.

Notes

  • For the best results, do not overcook the zucchini; you want it tender but still holding its shape.
  • If you do not have fresh herbs, you can use 1 teaspoon of dried Italian seasoning in the oil mixture.
  • This recipe works well for gluten free grilled side dish requirements.
