  • 3 very ripe large bananas, mashed
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 1/2 cup packed light brown sugar
  • 1/4 cup melted unsalted butter or coconut oil
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • Optional: 1/2 cup chocolate chips or chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, combine the mashed bananas, Greek yogurt, brown sugar, melted butter (or oil), eggs, and vanilla extract. Mix these wet ingredients until they are just combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just combined. Do not overmix; a few streaks of flour are fine.
  5. If using, fold in the chocolate chips or nuts now.
  6. Pour the batter into your prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  8. Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely before slicing.

Notes

  • Using very ripe, spotty bananas provides the best natural sweetness and moisture for this recipe.
  • For a lower-fat option, you can substitute the butter with the same amount of melted coconut oil or use non-fat Greek yogurt.
