Easy oven-roasted potatoes with Greek flavors, featuring salty feta. These crispy potatoes are a simple side dish perfect for weeknight dinners or Mediterranean-inspired meals.

  • 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, zested and juiced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato cubes with olive oil, dried oregano, garlic powder, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, or until the potatoes are tender and golden brown, flipping them halfway through.
  5. Remove the baking sheet from the oven and sprinkle the crumbled feta cheese over the potatoes.
  6. Return the baking sheet to the oven for another 5 minutes, or until the feta is slightly softened.
  7. Garnish with fresh parsley, lemon zest, and a squeeze of fresh lemon juice before serving.

Notes

  • For extra crispy potatoes, ensure they are in a single layer on the baking sheet and do not overcrowd the pan.
  • You can add other Mediterranean herbs like thyme or rosemary along with the oregano.
