Garlic Parmesan Focaccia

An easy, beginner-friendly focaccia bread recipe topped with garlic, Parmesan cheese, and Italian herbs. Perfect for any occasion, from weeknight dinners to holiday appetizer boards.

  • 1 ½ cups warm water (105-115°F)
  • 2 ¼ teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 3 ½ cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • ½ cup olive oil, divided
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • ½ teaspoon black pepper

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. Add flour, salt, and ¼ cup olive oil to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Lightly oil a clean bowl. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Grease a 9×13 inch baking pan with 1 tablespoon of olive oil.
  6. Gently punch down the dough and transfer it to the prepared pan. Press the dough to fill the pan evenly.
  7. Cover the pan and let the dough rise for another 30-45 minutes.
  8. Preheat your oven to 425°F (220°C).
  9. Dimple the dough by pressing your oiled fingertips into it, creating deep indentations.
  10. In a small bowl, mix the remaining ¼ cup olive oil with minced garlic, Parmesan cheese, rosemary, thyme, and black pepper.
  11. Drizzle the garlic-Parmesan mixture evenly over the focaccia.
  12. Bake for 20-25 minutes, or until golden brown and cooked through.
  13. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

  • For a crispier crust, use a metal baking pan. For a softer crust, use a glass or ceramic pan.
  • If you don’t have fresh herbs, you can use 1 teaspoon each of dried rosemary and thyme.
  • This focaccia is delicious served warm with your favorite pasta dishes or as an appetizer.
