1.5 lbs boneless, skinless chicken thighs or breasts
1.5 lbs baby potatoes, halved or quartered if large
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
2 tablespoons butter
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup heavy cream (optional, for creamier sauce)
Fresh parsley, chopped (for garnish)
Instructions
Place chicken in the bottom of your slow cooker.
Add the baby potatoes around the chicken.
In a small bowl, whisk together chicken broth, grated Parmesan cheese, butter, minced garlic, Italian seasoning, salt, and pepper.
Pour the sauce mixture over the chicken and potatoes.
Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is cooked through and potatoes are tender.
If desired, stir in heavy cream during the last 30 minutes of cooking for a creamier sauce.
Shred or slice the chicken, then stir it back into the sauce with the potatoes.
Garnish with fresh parsley before serving.
Notes
For a richer flavor, you can use chicken thighs.
If you don’t have baby potatoes, you can use cubed Yukon Gold or red potatoes.
Ensure potatoes are cut into uniform sizes for even cooking.
