20-Minute Asian Garlic Noodles with Parmesan

Make these savory garlic noodles fast. This easy Asian-inspired recipe uses a rich, buttery sauce with garlic and Parmesan cheese, ready in under 20 minutes for a perfect weeknight dinner.

Ingredients

  • 8 ounces spaghetti or linguine
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional, for depth)
  • 1 teaspoon brown sugar
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons fresh parsley or chives, chopped

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve about 1/2 cup of the starchy pasta water before draining.
  2. While the pasta cooks, prepare the sauce. Melt the butter in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and cook for about 1 minute until fragrant. Do not let the garlic brown.
  4. Stir in the soy sauce, oyster sauce (if using), brown sugar, and black pepper. Cook for 30 seconds, stirring constantly.
  5. Add the drained pasta directly to the skillet with the sauce. Toss well to coat.
  6. Add 1/4 cup of the reserved pasta water and the grated Parmesan cheese. Toss continuously until the sauce thickens slightly and coats the noodles evenly. Add more pasta water, one tablespoon at a time, if the sauce seems too dry.
  7. Remove from heat. Stir in the chopped parsley or chives.
  8. Serve immediately, topped with extra Parmesan cheese.

Notes

  • You can easily make this recipe spicy by adding 1 teaspoon of chili garlic sauce or red pepper flakes to the butter mixture.
  • Use any long noodle you prefer, such as ramen, lo mein, or fettuccine.
  • For a richer flavor, substitute half the butter with brown butter.
