1.5 lbs sirloin steak, cut into 1-inch cubes
1.5 lbs baby potatoes, halved or quartered
4 tbsp unsalted butter
4 cloves garlic, minced
1 tbsp olive oil
1 tsp dried rosemary
1/2 tsp salt
1/4 tsp black pepper
Fresh parsley, chopped, for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the potatoes with olive oil, rosemary, salt, and pepper.
Spread the potatoes in a single layer on a large baking sheet.
Bake for 20 minutes, or until the potatoes begin to soften.
While the potatoes bake, pat the steak bites dry with paper towels. Season with salt and pepper.
In a large oven-safe skillet (cast iron works well), melt 2 tbsp of butter over medium-high heat.
Add the steak bites in a single layer, ensuring not to overcrowd the pan. Sear for 1-2 minutes per side until browned. Remove steak from skillet and set aside.
Add the remaining 2 tbsp of butter to the skillet. Add the minced garlic and cook for 1 minute until fragrant.
Add the partially baked potatoes to the skillet with the garlic butter. Toss to coat.
Return the steak bites to the skillet, nestling them among the potatoes.
Transfer the skillet to the preheated oven.
Bake for another 10-15 minutes, or until the potatoes are tender and browned, and the steak is cooked to your desired doneness.
Garnish with fresh parsley before serving.

For crispier potatoes, ensure they are dry before tossing with oil and seasoning.
Do not overcrowd the skillet when searing the steak to achieve a good sear. Cook in batches if necessary.
