A simple and colorful fruit pizza made with a sugar cookie crust and cream cheese frosting. Perfect for a quick dessert.

  • 1 (16.5 ounce) package refrigerated sugar cookie dough
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups assorted fresh fruit, sliced or chopped (strawberries, blueberries, kiwi, mandarin oranges, raspberries)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Press the sugar cookie dough evenly into the bottom of a 12-inch pizza pan or a baking sheet.
  3. Bake for 12-15 minutes, or until golden brown around the edges. Let the crust cool completely.
  4. In a medium bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  5. Spread the cream cheese frosting evenly over the cooled sugar cookie crust.
  6. Arrange the assorted fresh fruit over the frosting in a decorative pattern.
  7. Chill for at least 30 minutes before slicing and serving.

  • For mini fruit pizzas, press cookie dough into mini muffin tins and bake for 8-10 minutes.
