  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

  • 2 large eggs
  • 1/2 cup milk
  • 1 cup panko breadcrumbs (for extra crunch)
  • Vegetable oil, for frying

Instructions

  1. Pat the drained pickles very dry using paper towels. This step is key for crispiness.
  2. Set up a standard breading station with three shallow dishes. In the first dish, combine the flour, salt, pepper, garlic powder, and cayenne pepper. Mix well.
  3. In the second dish, whisk together the eggs and milk until combined.
  4. In the third dish, place the panko breadcrumbs.
  5. Working in small batches, dredge the dry pickles first in the flour mixture, shaking off any excess.
  6. Next, dip the floured pickles into the egg mixture, allowing excess to drip off.
  7. Finally, press the pickles firmly into the panko breadcrumbs, coating them completely. Place the breaded pickles on a clean plate or baking sheet.
  8. Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 375°F (190°C). Use a thermometer to monitor the temperature.
  9. Carefully add the breaded pickles to the hot oil in a single layer, ensuring you do not overcrowd the pot. Fry for 2 to 3 minutes, turning once, until they are deep golden brown and crispy.
  10. Use a slotted spoon to remove the fried pickles and place them on a wire rack set over a paper towel-lined baking sheet to drain excess oil.
