Assemble the Hand Pies: On a lightly floured surface, roll out one disk of chilled dough to about 1/8-inch thickness. Use a round cutter (about 5 inches in diameter) to cut out circles. Place about 2 tablespoons of the cooled apple filling onto one half of each circle, leaving a 1/2-inch border.
