Freezer Apple Pie Filling

Prepare this easy spiced apple pie filling ahead of time and freeze it flat for quick holiday baking. It’s perfect for making pies whenever you need them.

  • 6 cups peeled, cored, and sliced apples (about 2.5 lbs), use a mix of firm, tart apples like Granny Smith, Honeycrisp, and Fuji
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter, cut into small pieces

Instructions

  1. In a large bowl, combine the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and cloves. Toss gently to coat the apples evenly.
  2. Stir in the lemon juice.
  3. Divide the apple mixture into two portions. Place each portion into a separate freezer-safe gallon-sized zip-top bag. Lay the bags flat on a baking sheet and spread the filling evenly within the bags to create a thin layer.
  4. Remove as much air as possible from the bags before sealing.
  5. Freeze flat until solid, about 4-6 hours. Once frozen, you can stack the bags to save space.
  6. When ready to bake, thaw the filling overnight in the refrigerator or for a few hours at room temperature.
  7. Pour the thawed filling into your favorite pie crust. Dot with the small pieces of butter.
  8. Bake according to your pie crust recipe instructions, typically around 375°F (190°C) for 45-60 minutes, or until the crust is golden and the filling is bubbly.

Notes

  • Using a mix of apple varieties provides the best flavor and texture.
  • For a thicker filling, you can increase the flour slightly, but be careful not to make it gummy.
  • This filling can be stored in the freezer for up to 6 months.
  • If you prefer a smoother filling, you can chop the apples smaller.
