Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen corn kernels
  • 1 cup shredded cheddar cheese, divided
  • 1 package (8.5 ounces) corn muffin mix (like Jiffy)
  • 1 large egg
  • 1/3 cup milk
  • 1/4 cup vegetable oil

Instructions

  1. Preheat your oven to 400 degrees F. Lightly grease a 9-inch pie dish or an 8×8 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground beef and onion. Cook, breaking up the beef, until the meat is browned and the onion is soft, about 5 to 7 minutes. Drain off any excess grease.
  3. Stir the rinsed black beans, Ro-Tel, chili powder, cumin, salt, and pepper into the beef mixture. Cook for 2 minutes until heated through. Stir in the frozen corn and 1/2 cup of the shredded cheddar cheese. Spread this filling evenly into the bottom of your prepared baking dish.
  4. In a separate bowl, prepare the cornbread topping according to the package directions, usually mixing the corn muffin mix with the egg, milk, and vegetable oil. Mix until just combined; do not overmix.
  5. Pour the cornbread batter evenly over the beef filling in the baking dish.
  6. Bake for 20 to 25 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  7. Sprinkle the remaining 1/2 cup of cheddar cheese over the top during the last 5 minutes of baking.
  8. Let the Tamale Pie rest for 5 minutes before you slice and serve it.
