12 Medjool dates
4 oz soft goat cheese, room temperature
1 tablespoon olive oil
1 teaspoon fresh rosemary, chopped
Pinch of black pepper
Optional: 1 tablespoon honey for drizzling
Instructions
Preheat your oven to 375°F (190°C). Line a small baking sheet with parchment paper.
Carefully slice each date lengthwise down one side, opening it slightly without cutting all the way through. Remove any pits.
In a small bowl, mix the softened goat cheese with the chopped rosemary and black pepper.
Use a small spoon or knife to stuff about 1 teaspoon of the cheese mixture into the center of each date. Gently press the date closed around the filling.
Arrange the stuffed dates on the prepared baking sheet. Drizzle lightly with olive oil.
Bake for 8 to 10 minutes, or until the dates are warm and slightly softened, and the cheese is beginning to melt.
Remove from the oven. If desired, drizzle with honey immediately before serving.
Serve warm as an easy entertaining appetizer.
