  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 12 ounces penne pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Season the chicken pieces with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  3. Add minced garlic to the pot and cook for 30 seconds until fragrant. Do not let it burn.
  4. Pour in the chicken broth and bring to a boil. Add the penne pasta and stir. Reduce heat to medium-low, cover, and cook for 10-12 minutes, stirring occasionally, until the pasta is nearly tender.
  5. Stir in the heavy cream and return the chicken to the pot. Cook for 2 minutes until the sauce thickens slightly.
  6. Remove the pot from the heat. Stir in the grated Parmesan cheese until the sauce is creamy.
  7. Serve immediately topped with extra Parmesan cheese and fresh parsley.
