1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried Italian seasoning
4 cloves garlic, minced
4 cups chicken broth
12 ounces penne pasta
1 cup heavy cream
1 cup grated Parmesan cheese, plus more for serving
1/4 cup fresh parsley, chopped
Instructions
Season the chicken pieces with salt, pepper, and Italian seasoning.
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
Add minced garlic to the pot and cook for 30 seconds until fragrant. Do not let it burn.
