Homemade Taco Bell Mexican Pizza Copycat Recipe

Make this easy, crispy Mexican pizza at home. It features seasoned ground beef and refried beans layered between tortillas, topped with cheese and sauce. This recipe is quick enough for a weeknight dinner.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 (16 ounce) can refried beans, warmed
  • 8 small flour tortillas (about 6 inches)
  • 1 cup enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup diced tomatoes (for topping)
  • 1/4 cup sliced black olives (for topping)
  • Shredded lettuce (for topping)

Instructions

  1. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.
  2. Stir in the taco seasoning and water. Simmer for 5 minutes, stirring occasionally, until the sauce thickens slightly. Set aside.
  3. Preheat your oven to 400°F (200°C). Lightly spray a baking sheet with cooking spray.
  4. Place four tortillas on the prepared baking sheet. Spread an even layer of warmed refried beans over each tortilla.
  5. Spoon the seasoned ground beef mixture over the beans on each tortilla.
  6. Top the beef layer with half of the shredded cheese.
  7. Place the remaining four tortillas on top of the cheese layer. Brush the top tortilla lightly with a little water to help it crisp.
  8. Bake for 8 to 10 minutes, or until the tortillas are lightly crisp.
  9. Remove from the oven. Pour the enchilada sauce evenly over the top of both layers of tortillas.
  10. Sprinkle the remaining cheese over the sauce. Return to the oven for 3 to 5 minutes, until the cheese melts.
  11. Remove the pizzas from the oven. Top immediately with diced tomatoes, sliced black olives, and shredded lettuce before slicing and serving.

Notes

  • For extra crispy tortillas, you can lightly brush both sides of the tortillas with oil before assembling the layers and bake them for 3 minutes per side before adding toppings.
  • If you are planning meals for the week, this recipe pairs well with simple meal planning strategies.
  • If you prefer a different meat, ground turkey works as a substitute for the ground beef.
