2 pounds ground beef (80/20 recommended)
1 cup breadcrumbs
1/2 cup milk
1/4 cup finely chopped onion
2 large eggs
2 tablespoons ketchup
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup BBQ sauce (for glaze)
1 tablespoon brown sugar (for glaze)
1 teaspoon Worcestershire sauce (for glaze)
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, combine ground beef, breadcrumbs, milk, chopped onion, eggs, ketchup, salt, and pepper. Mix gently until just combined. Do not overmix.
Shape the mixture into a loaf shape on a baking sheet or in a loaf pan.
In a small bowl, whisk together BBQ sauce, brown sugar, and Worcestershire sauce for the glaze.
Spread half of the glaze over the top of the meatloaf.
Bake for 45 minutes.
Remove from oven, spread the remaining glaze over the meatloaf, and bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
For a tender meatloaf, avoid overmixing the ingredients.
If you don’t have breadcrumbs, you can substitute with crushed crackers or oats.
Leftover meatloaf is delicious sliced and used for sandwiches.
