  • 4 tablespoons unsalted butter, divided
  • 4 cloves fresh garlic, minced
  • 1 small yellow onion, finely chopped
  • 1 1/2 cups long grain white rice
  • 2 1/4 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil and 2 tablespoons of the butter in a medium saucepan over medium heat.
  2. Add the chopped onion and cook until softened, about 3 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
  4. Add the long grain white rice to the saucepan. Stir constantly for 2 minutes to lightly toast the grains. This step adds nuttiness.
  5. Pour in the chicken broth, salt, and pepper. Bring the mixture to a boil.
  6. Once boiling, immediately reduce the heat to the lowest setting, cover the saucepan tightly, and simmer for 15 minutes without lifting the lid.
  7. Remove the saucepan from the heat and let it stand, covered, for an additional 10 minutes. Do not remove the lid during this resting time.
  8. Fluff the rice gently with a fork. Stir in the remaining 2 tablespoons of butter until melted and combined.
  9. Garnish with fresh parsley before serving.
