1 tablespoon olive oil
1 pound ground beef
1 medium onion, chopped
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes and green chilies, undrained
1 (15 ounce) can tomato sauce
1 (10 ounce) can mild red enchilada sauce
1 packet (1 ounce) taco seasoning mix
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (10 ounce) bag Fritos corn chips
2 cups shredded cheddar or Mexican blend cheese
Optional toppings: sour cream, sliced green onions, salsa, sliced jalapeños
Instructions
Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
Heat the olive oil in a large skillet over medium heat. Add the ground beef and chopped onion. Cook, breaking up the beef, until the beef is browned and the onion is soft, about 5 to 7 minutes. Drain off any excess grease.
Stir the rinsed black beans, diced tomatoes and green chilies, tomato sauce, enchilada sauce, taco seasoning, chili powder, cumin, salt, and pepper into the skillet with the beef mixture. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
Spread half of the Fritos chips in an even layer across the bottom of the prepared baking dish.
Pour the entire beef and chili mixture evenly over the layer of Fritos chips.
Sprinkle 1 cup of the shredded cheese over the chili layer.
Top the cheese with the remaining half of the Fritos chips.
Sprinkle the remaining 1 cup of cheese over the top layer of chips.
Bake for 15 to 20 minutes, or until the cheese is melted and bubbly.
Let the Frito Pie rest for 5 minutes before serving. Offer your favorite toppings on the side.
Notes
For a spicier dish, use hot enchilada sauce or add a pinch of cayenne pepper to the chili mixture.
If you want to make this a budget friendly meal, you can substitute half of the ground beef with an extra can of beans.
You can assemble this entire casserole ahead of time and keep it covered in the refrigerator for up to 24 hours. Add about 10 extra minutes to the baking time if baking straight from the fridge.
