1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 packet (1 ounce) taco seasoning mix
1/2 cup water
1 cup shredded Monterey Jack or cheddar cheese
8 large (10-inch) flour tortillas

Instructions
Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 4 minutes. Add garlic and cook for 1 minute more until fragrant.
Add the ground beef to the skillet. Break it up with a spoon and cook until browned. Drain off any excess grease.
Stir in the taco seasoning and water. Bring the mixture to a simmer, then reduce heat to low and cook until most of the liquid evaporates, about 5 to 7 minutes. Remove from heat and stir in half of the shredded cheese until melted.
Warm the tortillas briefly in the microwave or a dry skillet to make them pliable.
Spoon about 1/4 cup of the beef mixture onto the center of each tortilla. Sprinkle the remaining cheese over the beef filling.
Fold the sides of the tortilla inward over the filling, then tightly roll the tortilla up like a burrito, tucking in the ends to seal the filling. Secure with toothpicks if necessary.
Lightly spray both sides of each rolled chimichanga with cooking spray.
Preheat your air fryer to 375 degrees Fahrenheit (190 degrees Celsius).
Place the chimichangas in the air fryer basket in a single layer, ensuring they do not touch. Work in batches if needed.
Air fry for 8 to 10 minutes, flipping halfway through, until the tortillas are golden brown and crispy.
Serve immediately with your favorite toppings like salsa, sour cream, or guacamole.
Notes
For a baked option, place the sprayed chimichangas on a baking sheet and bake at 400 degrees Fahrenheit (200 degrees Celsius) for 15 to 20 minutes, flipping halfway, until golden and crisp.
You can substitute shredded chicken for the ground beef to make Chicken Chimichangas.
These freeze well. Assemble completely, wrap tightly in plastic wrap, and freeze. To cook from frozen, add about 5 to 7 minutes to the air fryer cook time.
