Ingredients
Scale
1 tbsp butter
1 tbsp olive oil
2 cloves garlic, minced
1 cup long-grain white rice, uncooked
2 cups chicken broth
1/2 cup milk or heavy cream
1/2 tsp salt
1/4 tsp black pepper
1 cup sharp cheddar cheese, shredded
1/4 cup Parmesan cheese, grated
1/4 cup cream cheese, cubed
Instructions
Melt butter and olive oil in a medium saucepan over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
Add the uncooked rice to the saucepan. Stir constantly for 1 minute to toast the grains slightly.
Pour in the chicken broth, milk (or cream), salt, and pepper. Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during simmering.
Remove the saucepan from the heat. Keep it covered for 5 minutes to steam.
Uncover the rice. Add the shredded cheddar cheese, grated Parmesan cheese, and cubed cream cheese.
Stir gently until all the cheese is melted and the rice is creamy and fully combined. Serve immediately.
Notes
For a richer flavor, substitute half the chicken broth with vegetable broth.
