1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup granulated sugar, divided
1/2 cup (1 stick) unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
1/4 cup packed light brown sugar
1 tablespoon extra ground cinnamon for the swirl
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of ground cinnamon. Set this dry mixture aside.
In a large bowl, use an electric mixer to cream together the softened butter and 3/4 cup of the granulated sugar until light and fluffy. This step builds texture.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry mixture. Mix only until just combined; do not overmix the batter.
Prepare the cinnamon swirl filling: In a small bowl, mix the remaining 1/4 cup granulated sugar, the brown sugar, and the extra 1 tablespoon of cinnamon.
Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter layer.
Top with the remaining batter, and then sprinkle the rest of the cinnamon sugar mixture over the top. Use a knife or skewer to gently swirl the topping into the batter a few times.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely before slicing.
Notes
For an extra moist loaf, you can brush the top with melted butter immediately after removing it from the oven.
If you do not have buttermilk, mix 1/2 cup of regular milk with 1/2 teaspoon of white vinegar or lemon juice and let it sit for 5 minutes before using.
