I’m Alex, and I am happy you are here. This recipe proves that incredible, soul-satisfying food does not need to be complicated. You can make this creamy, hearty chicken cobbler casserole with minimal effort using a rotisserie chicken shortcut and a cheesy biscuit topping for a perfect weeknight dinner.

Ingredients

Scale
  • 3 cups cooked, shredded rotisserie chicken
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of celery soup
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded sharp cheddar cheese
  • 1 package (about 10.5 ounces) Cheddar Bay Biscuit Mix (or similar refrigerated biscuit dough)
  • 1/2 cup milk (for biscuit mix, check package directions)
  • 4 tablespoons melted butter (for brushing biscuits)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, cream of celery soup, chicken broth, sour cream, thyme, pepper, and salt. Mix until everything is well combined.
  3. Stir in the frozen mixed vegetables and the shredded cheddar cheese into the chicken mixture.
  4. Spread the entire chicken mixture evenly into your prepared baking dish. This creamy chicken and biscuit base is the heart of your savory cobbler recipe.
  5. Prepare the biscuit topping according to the package directions, usually involving mixing the dry mix with milk. Drop spoonfuls of the biscuit dough over the chicken filling, leaving small gaps between the mounds.
  6. Brush the tops of the biscuit dough lightly with melted butter.
  7. Bake for 25 to 30 minutes, or until the filling is bubbly and the biscuit topping is golden brown and cooked through.
  8. Let the chicken cobbler casserole rest for 5 minutes before you serve this hearty chicken bake.

Notes

  • Using rotisserie chicken is a great shortcut for quick family meals.
  • If you do not have Cheddar Bay Biscuit Mix, you can use a standard refrigerated biscuit dough and sprinkle extra cheddar cheese on top before baking.
  • This recipe is a great alternative to chicken pot pie casserole.
