You can make incredible, soul-satisfying food without complicated steps. This Garlic Parmesan Melting Cabbage recipe transforms simple cabbage into a tender, savory side dish with crispy edges. It is perfect for weeknights and proves that cabbage can be a star vegetable.

Ingredients

Scale
  • 1 head green cabbage
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper for simple cleanup.
  2. Cut the head of cabbage into four thick wedges, keeping the core intact so the leaves hold together. These are your cabbage steaks.
  3. In a small bowl, whisk together the olive oil, minced garlic, salt, and pepper.
  4. Brush the oil mixture evenly over all sides of each cabbage wedge.
  5. Place the seasoned cabbage wedges cut-side down on the prepared baking sheet.
  6. Roast for 20 minutes.
  7. Remove the baking sheet from the oven. Sprinkle the tops of the cabbage wedges generously with the grated Parmesan cheese.
  8. Return the cabbage to the oven and bake for another 5 to 10 minutes, or until the edges are tender and the cheese is melted and slightly golden brown.
  9. Remove from the oven, garnish with fresh parsley, and serve immediately. This is one of the best easy cabbage recipes for a satisfying side dish.

Notes

  • If you want a more Southern fried cabbage flavor, you can sauté the cabbage in bacon grease instead of olive oil.
  • For a low carb cabbage recipe, skip any added sugar or sweet glazes.
  • This recipe works well for meal prep; reheat gently in the oven to maintain texture.
